I’ve posted a recipe for healthy snowballs made from dates and coconut before but this recipe is a variation of the standard date bliss balls using coconut crunch (aka roasted coconut chips). The larger texture of coconut chips added a different texture to these bliss balls, which I quite enjoyed!

I’ve made these bite-sized, which works pretty well with the crunchy texture – if they were larger I think they’d be a bit on the messy side as the coconut chips don’t allow for an even texture.

These coconut crunch bliss balls make for a great alternative to popcorn when watching a movie! I could even imagine them working as cereal in some nut milk…

Refined sugar free, gluten free and suitable for paleo, GAPS, SCD and AIP diets.

Coconut Crunch Bliss Balls

Ingredients

  • 1 cup pitted dates
  • 1 cup coconut chips
  • water

Instructions

  1. Place the dates into a food processor and pulse until you achieve a doughy consistency. You may have to add a bit of water
  2. Roast the coconut chips in a pan or on a tray in the oven for a few minutes until they’re golden brown
  3. Let cool
  4. Place the date ‘dough’ and the coconut chips into a bowl and combine with your hands
  5. Separate little bite-sized portions and roll into balls
